An antioxidant in food as well as sequestrant, improving the quality and stability of food. It dissolves easily and acts instantaneously.Â
Emulsifying Agent
Emulsifier for oils in the cheesemaking process. Sodium citrate allows cheese to melt without becoming greasy.
